Election day is Gulaschtag
Today is Citizen's Day - in Hamburg is elected. You can make 20 crosses according to the new system, and the man and I are fully prepared to face this challenge.
Therefore, the whole family will set out on a small election walk. And since it is just very strange cold in the north, the mature and underage citizens need something strong to strengthen after returning home: Mom (so I) goes goulash with cucumber salad.
Since yesterday I am shopping by accident especially have found small onions, there is today a modification of the normal recipe. The onions are not broken up as usual, but gently mitgeschmurgelt long as a whole. I'm looking forward to the result!
For 2 1/2 people
Peel and chop 2 carrots
Clean a small stick of leeks, wash them thoroughly and also chop them into pieces slicing
squeeze 2 garlic cloves unpeeled with a wide knife
In a heavy pot (cast iron is really great!)
heat a little olive oil and a teaspoon of butter. Add the vegetables with a few sprigs of thyme and roast (which makes the sauce nice and strong afterwards).
Now, a spoonful of tomato paste is added. Unfortunately, that was all. So I dipped a couple of tomato pickles in oil and chopped them into vegetables.
Then turn up the temperature and add 500g beef goulash (happy of course) and sauté without lid.
(There are people who swear not to fry the meat but to add it directly to the gravy.) My mama always seared the meat - that's why I do it that way.)
The meat must not start to cook, but really should fry. Possibly. again raise the temperature.
When the meat is sautéed all around and a nice dark crust has formed on the bottom of the pot, add 1/2 l of meat stock. If you (understandably) do not have your own homemade food, take cold water and add half a bouillon of organic bouillon.
Pepper and boil, then switch back the temperature, put the lid on and simmer gently.
Add a good sip of red wine to taste after 10 minutes.
I had a Merlot in stock.
In the meantime, peel 500 g of small onions (silver onions). Be careful so that the onion layers do not peel off. Put the uncut onions into the pot too.
Now just at least1 Simmer gently over a low heat for 1/2 hour. Occasionally stir gently so the onions do not disintegrate. Should the liquid overcook, simply add some more water and wine.
Bring to the boil again shortly before eating, remove from heat and put a small piece of butter and a teaspoon of medium hot mustard under the goulash.
Served with cucumber salad
1 snake cucumber sliced,
1 onion, chopped pepper + salt, 1 tablespoon dill, dried and white wine vinegar
one sip of neutral oil
and 1 - 2 tablespoons maple syrup
Mix all ingredients in a bowl and leave to soak for about 30 minutes. Occasionally stir.
Season again before serving.

My conclusion:
The taste was great - the fleshy aroma was very pure, superbly supported by the Sweetness of the onions. A great alternative to Hungarian spiced goulash with peppers.
However, I would soon put the onions in the pot later.
